One benefit of being a farmer who sells their own meat is that you get to choose what cut of meat you want for your holiday table. For the last several years, we have chosen to serve a beef tenderloin for our Christmas dinner and we have decided to do the same this year. (Will this be the year we perfect our beef wellington?? Fingers crossed.) Each beef comes with TWO tenderloins, though, so even though we are keeping one for ourselves, we still have one left to sell! Known as filet mignon when cut into steaks, the tenderloin is a wonderfully tender roast.
